Interview with Nashville’s Libby Callaway

 
Hey #HipNJ! Lisa Marie Latino recently had the pleasure of speaking with Nashville’s own Libby Callaway, Founder of the Nashville-based consulting agency, The Callaway. Libby was so kind to inform us of all that this city has to offer!
 
She told us that Nashville is a fantastic place to get some BBQ, specifically hot chicken! Gallatin Pike is the hub for great BBQ as there are several spots near each other.
 
In addition to great food, there is also fantastic coffee shops, concerts and shops located near Marathon Music Works. It is a thriving area with very friendly people and a great variety of things to do!
 
If you’re looking for a place to stay in Nashville, Libby recommends the Noelle Hotel. A cultural mecca, this hotel is near several shops owned by local designers and artists.
 
Nashville is definitely a fun place to grab some drinks and see some live music. Libby recommends Robert’s Western World—“the honky-tonk to end all honky tonks!” Her two top country music venues are the Grand Ole Opry and the Ryman Auditorium, which used to be an old church!
 
Fashion, of course, is a hot commodity in Nashville. East Nashville is the place to be for great fashion and Libby’s recommendations include Black Shag Vintage and High Class Hillbilly.

Fabulous Female – Betty Galvan

This month’s Fabulous Female is Betty Galvan. Betty is a business owner, and Work at Home Mom to three very active boys. Yes, THREE! I’ve known Betty for a few years, and she’s been a constant source of motivation and inspiration for me.

Betty hails from Chicago, but has lived in Asia and NYC. For the last 8 years she’s been a NJ resident. Betty has led an exciting life, starting with moving to Tokyo, where she had her first son Diego. While she holds a degree in teaching, and taught at an International School, after having Diego, she felt it was best for her to stay at home.

While in Tokyo, Betty started blogging so she could keep her friends and family updated on her family’s progress. Little did she know that would eventually formulate in her own lifestyle blog “My Friend Betty Says”. Betty’s blog primarily focused on educational tips for how to raise bilingual children, as well as lifestyle and fashion ideas.

While blogging she was fortunate enough to connect, and freelance, with Ana Flores. Ana is the founder, and CEO, of the former Latina Bloggers Connect now WeAllGrow Latina Network. Ana was so impressed, that she hired Betty to work for her.

Betty was fortunate to connect with likeminded women, and #solopreneurs, while working at LBC. From Boston to LA, the women collaborated, motivated, inspired each other and exchanged ideas. It was a true sisterhood. When LBC took a turn focusing more on bringing women all over the US together, with annual conferences and summits, Betty knew she had to step back. She didn’t want to be away from her family so much. Betty also realized, while on her journey with LBC, that there were local business owners that needed help with their digital marketing strategies, social media managements and content creation.

Always forward thinking, Betty decided to keep the name of her blog @MyFriendBettySays and add Digital Marketing Studio to her resume, in the summer of 2017. Since making that decision, Betty has been helping others to increase and grow their business. She currently has two employees and will continue to expand.


When I asked Betty to tell me her secret for being so fabulous, she was humble as usual. She did tell me that she takes one hour of the day for herself. Whether it’s getting her nails done or going to the gym, that time is for her. Working from home has its advantages, so she’s able to tailor her schedule to that of her active children. She also has a very supportive husband and a cleaning lady!

#VeganDay 5 of NJ’s Best Vegan Restaurants

Hey #HipNJ! Today is #VeganDay! To celebrate, let’s take a look at five of the yummiest vegan restaurants in the area!

1.  Veganized, New Brunswick

Located in the heart of New Brunswick, this vegan eatery is the bomb-diggity! Highlights of the menu include their RAWzagna (gluten-free raw zucchini pasta, marinated mushrooms, fresh tomato, nut cheese, sundried tomato puree, pesto) and the BBQ Skewers (grilled seitan vegetable BBQ skewers, herbed white bean sauce, saffron rice, crusted oyster mushrooms with maple dijon). The undisputed fan favorite is the mackin’ cheese pictured above. It looks so good!

2.  Seed to Sprout, Fair Haven & Avon-by-the-Sea

This down-the-shore vegan joint is the real deal. It offers breakfast, lunch, brunch and dinner, teaches cooking classes, and operates a bakery located in Wanamassa. They offer a delicious Maui Wowie smoothie (house-made cashew milk, strawberries, mango, banana, coconut, and fresh tumeric) and a Bacon Cheddar Melt (seared marinated tempeh, caramelized onion, coconut bacon, cashew sauce, riddled on a millet-flax bread). 3. Heart Beet Kitchen, Westmont

A charming, farmhouse-inspired eatery, Heart Beet Kitchen has a wide range of tasty foods such zucchini noodles with eggplant meatballs or spicy Buffalo cauliflower sandwich on a gluten-free bun. They also offers some tasty deserts such as a chocolate chip dough bar with almond butter, a pumpkin pie, and a matcha chai. The highly-acclaimed Heart Beet Burger is pictured above. Looks tasty!

4. Papa Ganache, Matawan

Vegan baked goods have never sounded better at Papa Ganache, a vegan/gluten-free bakery! While known for their baked goods including biscotti, cheesecake cups, pies, cookies, cakes and more, they also serve other food such as baked ziti, chili, and pizza. Pictured above is their delicious banana chocolate chip walnut bread, which looks super yummy!

5. Veggie Heaven, Teaneck, Montclair, & Denville

Culturally-inspired Veggie Heaven is known for their Asian fusion food. With favorites like the Thai Bang Bang Chicken, Crispy Stuffed Tofu, and any of their sushi options, it’s hard to go wrong here. Pictured above is a few of their sushi rolls which look absolutely delicious!

Any of these options are a fantastic choice for celebrating #VeganDay! Enjoy the day and try some vegan food if you get the chance!
