Cara’s Cucina: Thanksgiving Stuffing

Today on Cara’s CucinaCara Di Falco teaches us how to make Thanksgiving Stuffing.

It is that time again! Prepare for Thanksgiving with this stuffing that will leave your guests wanting more. Check out the ingredients for this delicious Italian inspired stuffing  below.

Thanksgiving Stuffing
Serves 10-12

1 yellow onion, chopped
1 8 oz. package sliced baby bella mushrooms
2 tbs. chopped fresh parsley
2-3 cloves of garlic, chopped
2 apples, peeled, cored & cubed (or use pears if using my turkey recipe!)
3-4 celery ribs, chopped
1 c. dried tart cherries (or dried cranberries)
1/2 c. red wine
1 loaf stuffing bread, cubed and toasted (or left out overnight)
1 lb. sweet Italian sausage meat
1 3.5 oz package Italian style chestnuts, chopped
chicken stock
2 tbs. butter (plus some extra)
salt & pepper
Grated parmesan

Cara’s Cucina: Pumpkin Pie

Today on Cara’s CucinaCara Di Falco teaches us how to make Pumpkin Pie!

As we start getting ready for Thanksgiving, Di Falco shares this family recipe, courtesy of her great-grandmother. “Every time she brought it over for Thanksgiving, everybody went crazy,” she says. Check out the ingredients for this delicious pie below.

Nonni’s Pumpkin Pie

Homemade Pie Crust
1 15 oz. can pumpkin puree
1/2 c. dark brown sugar
1/2 c. sugar
1/2 tsp. salt
1 1/2 tsp. orange cognac liquor
1 tbs. ground cinnamon
2 tsp. ground ginger
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
4 eggs
1/2 c. heavy cream
1/2 c. milk
