Today on Cara’s Cucina, Cara Di Falco teaches us how to make Mediterranean Fish in Parchment Paper!
DiFalco uses one pound of cod for the dish, which serves four. Additionally, she combines dry white wine, garlic and capers to create this yummy dish! Check out the full list of ingredients below.
1 lb. of cod (or other available white fish) cut into 4 equal pieces
1/4 of a red onion, thinly sliced
2 cloves of garlic, minced
1 small can chopped tomatoes (or fresh cherry tomatoes, halved)
1/2 c. black olives, pitted and halved
1/4 c. capers, drained
2 tbs. olive oil
1/4 c. dry white wine, such as a pinot grigio
salt & red pepper flakes
4 slices of lemon
