Wednesday is here again. The week is half-way over, and we can all use some wisdom right about now. Here are some quotes from your favorite New Jersey celebrities to help you out.
Krowicka entered the kitchen against talented chefs from around the country. The appetizer round started with a basket of local chicken, pickled chilies, and Switchel, a water and vinegar based drink seasoned with ginger. Krowicka served the judges fried chicken wings with pickled baby squash, squash blossom, and pickled chile vinaigrette.
For the entrée, chefs were excited about the main ingredient, grass-fed lamb, but were thrown a curveball with gummy farm animals. Krowicka rose to the challenge, serving lamb goulash with aerated polenta, arugula, and gummy farm animal purée.
The competition came down to the wire with a dessert basket of corn, gooseberry, and duck eggs. Krowicka served corn on the cob pudding, gooseberry marmalade, goats milk foam, poppy seed streusel, and bruléed duck egg yolk.
Ultimately, chefs Amanda Freitag, Chris Santos and Marc Murphy named Krowicka the winner. To celebrate, a dessert inspired by the final course of her winning menu was added to the dinner menu at Restaurant Latour.
Krowicka brings a wealth of culinary insight and a respect for ingredients to the menu at Crystal Springs Resort’s four-star Restaurant Latour. She fell in love with cooking during her childhood summer visits to Poland, where she would spend many hours in her grandmothers’ kitchens. She’d wake up early to fetch hen eggs and crisp up farm-fresh potatoes baked in the dirt from the night before.
Under her guidance, Restaurant Latour remains one of New Jersey’s top dining destinations, retaining four stars in a Newark Star-Ledger review in 2016 and its place as one of New Jersey Monthly’s “25 Best Restaurants.”
