Southern Fried Chicken

3-4 lbs. chicken
1 qt. buttermilk
2 tsp. paprika
1 tsp. hot sauce
2 Tbs. cornstarch
1 tsp. white pepper
2 tsp. garlic powder
1 tsp. black pepper
2 tsp. onion powder
2 C. all-purpose flour
1 tsp. fresh thyme leaves

Chef Jesse’s Sweet Potato Waffles

2 C. cake flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
1 Tbs. granulated sugar
2 tsp. light brown sugar
1/2 C. vegetable oil
1 1/2 C. buttermilk
1/2 tsp. pure vanilla extract
1/2 C. unsalted butter, melted
3 large eggs, separate yolks from whites
1 small sweet potato, baked, peeled and mashed
