Cara’s Cucina: Shrimp Salad

Shrimp Salad
Serves 4

1-1.5 lb. shrimp, peeled and deveined
1-2 cups of thinly chopped celery, mostly the leafy core and a few stalks
1/4-1/2 tsp. red pepper flakes
1/2 tsp. oregano
salt & pepper to taste
juice of 1 lemon half, plus lemon slices for garnish
1/4 c. extra virgin olive oil
1/4 c. green olives, halved (optional)

Berry Cobbler
For the Filling
4 c. mixed berries (blueberries, strawberries, blackberries, raspberries)
1/2 c. sugar
1 tsp. vanilla
zest and juice of 1 lemon

For the Crumble
1 c. rolled oats
1/4 c. flour
2 tbs. brown sugar
1/4 c. pumpkin seeds
1 tbs. cinnamon
pinch of salt
1 stick of butter (softened to room temperature)

3/4 c. almond flour
3 1/2 tsp. baking soda
1 tsp. (scant) salt
1 tbs. (heaping) sugar
1 tsp. cinnamon
3 eggs, separated
1 1/4 c. almond milk
3 tbs. melted butter (optional)
1 tsp. vanilla extract
1/2 c. mini dark chocolate chips
butter, syrup, toasted slivered almonds for serving
