Chef David Burke Spices Up A Summer Favorite

At a time when gazpacho was dismissed by many in the culinary world as a “peasant dish,” Chef David Burke saw its potential. Now, the internationally-acclaimed restaurateur wants to share the delicious recipe he serves at David Burke Orange Lawn!

Putting a flavorful twist on the classic summer dish, Burke seizes upon the high quality of Jersey-grown produce. The following recipe is a modified version, perfect for the home cook to try out.

Tomato & Watermelon Gazpacho With Shrimp Skewers (serves 4)

Shrimp skewers:

  • 12 large shrimp, peeled and de-veined with the tails removed
  • 1 Tbsp of chives
  • Large slices of avocado
  • Cherry tomatoes
  • Red bell pepper
Gazpacho:
  • 5 large ripe tomatoes, quartered
  • ½ cucumber, peeled, seeded, and chopped
  • ½ of one red bell pepper, chopped
  • 3 cups of cubed watermelon
  • 2 cloves of garlic
  • 2 Tbsp of coarse or kosher salt
  • 2 Tbsp of freshly ground pepper
  • 1 Tsp of cayenne pepper
  • ½ cup of olive oil
  • ¼ cup of sherry vinegar
  • 2 Tbsp of quality mayonnaise, such as Hellmann’s
  • 1 Tsp of ground cumin
  • 1 Tbsp of smoked paprika
  • Three thin slices of cucumber
Place all ingredients in a food processor and process until finely pureed.  Depending on the size of your processor, you may have to do this in two or more steps.  Reserve.

Poach shrimp in salted water for 5 minutes, then shock them in ice water. Assemble on a skewer in order: shrimp, avocado, pepper, cherry tomato. Place skewer over gazpacho on the edges of the bowl. Place cucumber slices on top. Sprinkle chives over your skewer. Enjoy!
